INGREDIENTS

Rice

  • 2 Cups sushi rice
  • 3 cups water
  • ½ cup rice vinegar
  • 2 T mirin
  • 2 T sugar
  • Salt to taste

Spicy Mayo

  • 2 Cups mayonnaise
  • ½ Tsp lemon juice
  • 1 Tbsp sriracha sauce

Crab

  • 5 Pounds king crab legs
  • 8 oz butter, melted
  • 16 soy papers

King Crab Rolls with Sushi Rice and Spicy Mayo

Rice 

1. Bring sushi rice and water to a boil. Reduce heat and cover until the water is cooked off(about 10 minutes).

2.Combine rice vinegar, mirin, and sugar in a pot and cook until sugar is dissolved.3.When the sushi rice is cooked, add the seasoning liquid. Stir and cool quickly. Add salt to taste.

Spicy Mayo

1. Combine mayonnaise, lemon juice, and sriracha sauce and stir to mix well.

King Crab 

1. Carefully cut the king crab legs in half lengthwise.

2. Baste with melted butter.

3. Grill 2 minutes, cut side down. Turn and cook another 5-7minutes.

4. Remove from grill and remove meat from shell when cooled.

5. Lay out your soy paper. Place 2-3 tablespoons of rice on the end of your soy paper (depending on the size), add a layer of crab, and finish with spicy mayo.

6. Carefully roll up your rice, crab, and spicy mayo. Serve warm or cooled.
